# Zutaten:

→ Pickled Red Cabbage

01 - 1 cup red cabbage, thinly sliced
02 - 1/4 cup apple cider vinegar
03 - 1/4 cup water
04 - 1 tablespoon granulated sugar
05 - 1/2 teaspoon salt

→ Hummus

06 - 1 cup canned chickpeas, drained and rinsed
07 - 2 tablespoons tahini
08 - 2 tablespoons lemon juice
09 - 1 garlic clove, minced
10 - 2 tablespoons olive oil
11 - 1/4 teaspoon ground cumin
12 - Salt and freshly ground black pepper, to taste

→ Toast Assembly

13 - 4 slices rustic bread, such as sourdough or country loaf
14 - 2 teaspoons olive oil, for brushing
15 - Fresh parsley or cilantro, finely chopped, for garnish
16 - Sesame seeds, optional, for garnish

# Anleitung:

01 - Combine apple cider vinegar, water, sugar, and salt in a small saucepan. Bring to a gentle simmer, stirring until the sugar and salt dissolve. Place the sliced red cabbage in a heatproof bowl, pour the hot pickling liquid over it, and let cool to room temperature for approximately 15 minutes.
02 - In a food processor, blend chickpeas, tahini, lemon juice, garlic, olive oil, cumin, salt, and pepper until smooth and creamy. If needed, add a splash of water to adjust consistency. Taste and adjust seasoning as preferred.
03 - Lightly brush both sides of the bread slices with olive oil. Toast in a skillet or beneath a broiler until golden and crisp, about 2 to 3 minutes per side.
04 - Spread a generous layer of hummus onto each toast. Top with well-drained pickled red cabbage. Garnish with fresh parsley, cilantro, and sesame seeds if desired.
05 - Present toasts immediately while the bread remains warm and crisp.
