Kaltes Roastbeef mit Grüner Sauce (Druckversion)

Zartes gekühltes Rindfleisch mit einer belebenden grünen Sauce aus frischen Kräutern, Kapern und Knoblauch.

# Zutaten:

→ Meat

01 - 2 pounds beef roast (such as sirloin or ribeye)

→ Vegetables

02 - 1 tablespoon olive oil
03 - Salt and pepper to taste
04 - 1 cup fresh parsley, chopped
05 - 1/2 cup fresh cilantro, chopped
06 - 1/4 cup capers, rinsed and drained
07 - 2 cloves garlic, minced

→ Other

08 - 1 tablespoon Dijon mustard
09 - 1 tablespoon red wine vinegar
10 - 1/2 cup olive oil

# Anleitung:

01 - Preheat the oven to 175°C. Rub the beef roast with olive oil, salt, and pepper.
02 - Place the beef on a roasting rack in a roasting pan and roast for 1 hour and 30 minutes, or until the internal temperature reaches 57°C for medium rare.
03 - Remove the beef from the oven and let it rest for at least 15 minutes before slicing thinly.
04 - In a food processor, combine parsley, cilantro, capers, garlic, Dijon mustard, red wine vinegar, and olive oil. Blend until smooth. Season with salt and pepper to taste.
05 - Serve the sliced beef chilled or at room temperature, drizzled with the green sauce.
