In a large, deep skillet or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet, skin-side down. Sear until golden brown, about 5-7 minutes per side. Remove the chicken and set aside.

In the same skillet, add the sliced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

Add the sliced apples, white wine, chicken broth, and thyme to the skillet. Stir to combine, then return the chicken thighs to the skillet, skin-side up.

Bring the mixture to a simmer, then cover and reduce the heat to low. Cook for 40-50 minutes, or until the chicken is tender and cooked through.

Remove the chicken from the skillet and let it rest for a few minutes before serving. Increase the heat to medium-high and reduce the sauce slightly, if desired. Serve the chicken with the apple-wine sauce spooned over the top.
