In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Refrigerate while preparing the filling.

In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

Gently fold in the fresh raspberries into the whipped cream mixture.

Pour the raspberry cream filling over the chilled crust, smoothing the top with a spatula. Cover and refrigerate for at least 2 hours to set.

Before serving, top with additional fresh raspberries and garnish with mint leaves if desired.
